Grilled Shrimp & Cucumber Gazpacho

A summery recipe that mixes cool cucumber soup with piping sizzling grilled shrimp. This chilly soup combines the fragile taste of cucumber with silken tofu, zesty lime, and contemporary herbs. Including grilled shrimp brings the protein index to a whopping 49 grams.

Grilled shrimp and cucumber gazpacho

materials

8 (6 inches) wooden or steel
1/4 cup sesame seeds
2 cucumbers (4 cups), seeded and chopped
1/2 candy onion, chopped (3/4 cup)
1 clove garlic (peeled)
1/4 cup Italian parsley leaves
1/4 cup (2 oz) delicate silken tofu
1/4 cup olive oil (divided)
3 tablespoons lime juice
1 tablespoon sherry vinegar or white wine vinegar
3/4 teaspoon salt (divided)
1/2 teaspoon white or black pepper
1 pound shrimp (peeled and deveined)
1 teaspoon smoked paprika

If utilizing picket skewers, soak them in water for a minimum of half-hour.

Sauté the sesame seeds in a small dry sauté pan over medium-low warmth, stirring often, till aromatic and golden brown, about 3 minutes.

In a blender, mix cucumber, onion, garlic, parsley, tofu, 3 tablespoons oil, lime juice, and vinegar. Mix till easy. Season gazpacho with 1/2 teaspoon salt and pepper and chill for a minimum of 1 hour.

Preheat a grill or grill pan over medium-high warmth. Clear and oil the grill. Toss shrimp with remaining olive oil, paprika, and 1/4 teaspoon salt. Thread the shrimp onto the ready skewers. Grill the skewers till the shrimp are pink and opaque white throughout and attain an inside temperature of 145°F, about 3 minutes per facet.

Pour soup into 4 shallow soup bowls, balancing skewers on edges of bowls. Sprinkle with roasted sesame seeds. Serve instantly.
