Smashed avocado toast with egg, tomato, mozzarella and basil

1 slice of toasted whole-wheat bread Cooking spray 1 massive egg (50g) 1/3 avocado, smashed 2 oz (56g) recent mozzarella, sliced 2 tomatoes (65g) 2-3 recent basil leaves, chopped

Toast the bread. Coat a small saucepan with cooking spray and set over medium warmth. Crack the eggs into the frying pan and prepare dinner till the whites are set, about 2 to three minutes. Gently flip and prepare dinner for one more 30 seconds, then take away from warmth.
Unfold the crushed avocado on the toast and layer with the sliced mozzarella and tomatoes. High with eggs and sprinkle with chopped basil.
